Liz Hopkins is back at it in the Lincoln East main office.

“Not much is going on in here.  Can’t you tell?” Hopkins said, as we pause and listen to the noiseless room filled with maybe, if we’re lucky, four people.

One thing Hopkins was overly excited about was that she and her work friends were ordering Panera for lunch.  She was having to make a tough decision on if to order the broccoli cheddar soup or the mac n cheese, both being ordered with a baguette, of course.

“I like all breads”, Liz said.

After talking about her lunch ideas, we strolled out on another tangent about mac n cheese!  Hopkins’ all time favorite is homemade mac n cheese, but if she’s in the right mood she could go for a box of Kraft mac n cheese.  Hopkins says she has mastered the perfect way to cook a mean box of Kraft macaroni. Hopkins claims to not follow the directions on the back of the box.  In order, put butter on the noodles until it melts, then pour the packet of cheese onto the noodles, and finally put a tiny, tiny splash of milk in the pot to finish the cheesy pot of goodness.

“It makes it be more cheesy, instead of soupy”, Hopkins said.

Well this story didn’t have a lot to do with school, but it’s what was going on the office today at 10:55.  See you next week.
